  • 1 tbsp oil
  • 1/2 tsp grated ginger
  • 7-8 curry leaves
  • 1 tsp turmeric powder - I am using @holyspice.us
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1 1/2 tbsp tamarind paste
  • 1 can (16oz) coconut milk
  • 1 green/ red bell pepper
  • 1 cup green beans
  • 2 cups cauliflower florets
  • Fresh cilantro leaves
  • Salt and pepper
    1. Add oil, ginger, curry leaves and turmeric powder to a pan on medium heat. Add chopped bell peppers and sauté for 2 mins.
    2. Add the coconut milk and reduce heat. Add cauliflower, beans, salt, pepper, coriander powder and red chili powder. Let it cook for 10 mins or until cauliflower is soft.
    3. Add tamarind paste and cook for 2 more mins. Garnish with cilantro, red chili flakes and serve hot!
