- 1 tbsp oil
- 1/2 tsp grated ginger
- 7-8 curry leaves
- 1 tsp turmeric powder - I am using @holyspice.us
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 1/2 tbsp tamarind paste
- 1 can (16oz) coconut milk
- 1 green/ red bell pepper
- 1 cup green beans
- 2 cups cauliflower florets
- Fresh cilantro leaves
- Salt and pepper

- Add oil, ginger, curry leaves and turmeric powder to a pan on medium heat. Add chopped bell peppers and sauté for 2 mins.
- Add the coconut milk and reduce heat. Add cauliflower, beans, salt, pepper, coriander powder and red chili powder. Let it cook for 10 mins or until cauliflower is soft.
- Add tamarind paste and cook for 2 more mins. Garnish with cilantro, red chili flakes and serve hot!
